Playing the ‘include veges wherever possible’ game with the bf, as usual.🤷🏼♀️ 💚Quinoa + Broccoli Salad
Ingredients
•½ cup dry quinoa, rinsed
•salt & pepper (to taste)
•1 large head of broccoli, stalk end trimmed
•6 pitted dates, chopped
•3 spring onions, thinly sliced
•⅓ cup salted, roasted almonds, chopped
•¼ cup olive oil
•3 tablespoons lemon juice
•Parmesan (for sprinkling)
Method
• Cook the quinoa in boiling water until the seed separates from the tail and it’s soft to taste. Drain quinoa back into the same pot, place pot back on stove with heat OFF and put paper towel over the top of the pot so the quinoa continues to steam.
• Chop and prepare all other ingredients and place all in a bowl together with quinoa.
• Store in the fridge until use
