Ingredients
160g (1 small) Apple, sliced 0.5cm thick pieces
100ml water
15g Vanilla Protein Powder (Bulk Nutrients)
70g (2 large eggs) Egg Whites
50ml Unsweetened Almond Milk
1 Tbsp Cinnamon
1 Tsp Baking Powder
50g Low Fat Cottage Cheese
2 Tsp Artificial Sweetener
Method
1. Add sliced apple to a hot pan with water and some of the cinnamon dusted on top. Let these fry in the water until they have softened and most of the water has disappeared.
2. Whip all remaining ingredients except for Cottage Cheese and Sweetener, until it forms a bubbly egg mixture.
3. Add the egg mixture to the hot pan with pre-cooked apples and fry over a medium heat until the edges start to lift, flip and fry for a few more seconds then remove from heat (eggs will continue to cook due to hot pan).
4. Serve on a warm plate with cottage cheese, a dusting of artificial sweetener and some more cinnamon if you’re anything like me!
